►Ingredients for the KFC Fried Chicken

►Chicken Prep

Chicken drumsticks or Whole Chicken cut into 8 - 10 pieces (1.5kg or 3.3lbs)
Medium large pieces (not too large)
1 tsp baking soda
3 tsp salt
½ cup vinegar
Water

►Marination

2 tbsp chili sauce
2 tbsp light soy sauce
1 tbsp hot sauce
2 tbsp vinegar
1/4 cup pickle juice
1 tsp black pepper
1/2 tsp white pepper
1 tsp mustard powder
1/2 tsp red chili flakes
1.5 tsp garlic powder
1 tsp onion powder
2 tsp chicken seasoning
1 tsp msg
2 tsp salt
1 tsp red chili powder

►For the KFC Flour Mix

3 cups (360g) plain flour
1 tbsp black pepper
1 tbsp smoked paprika
1 tbsp sweet paprika
2 tsp mustard powder
2 tsp white pepper
2 tsp celery salt
1 tbsp garlic powder
2 tsp ginger powder
2 tsp onion powder
1 tbsp MSG
2 tsp salt
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried basil
½ tsp sage
½ tsp marjoram
1 tsp cayenne pepper
1 tsp red chili
1 tbsp chicken seasoning

►For Frying

1.5 litre or 50.7fl oz sunflower oil

►For the Sauce

1/2 cup mayonnaise
2 tbsp sriracha
1 tbsp hot sauce
2 tbsp pickle juice
1 tsp chipotle paste
1 garlic clove
1 tbsp vinegar
1/2 tsp chicken seasoning
1/4 tsp black pepper
Salt to taste
