Method

Start by preparing the unique masala powder. Dry roast 2 tsp coriander seeds, 1 tsp peppercorns, 1 tsp cumin seeds, and 5–6 dried red chilies on low flame for 3–4 minutes until aromatic. Cool and grind to a fine powder. Set aside 2 tsp of this spice mix.

With the remaining powder, blend it with a small piece of ginger and 3–4 garlic cloves into a smooth paste (add a little water if needed).

Take 500g chicken pieces and marinate with ¼ tsp turmeric, 1 tsp salt, 1 tsp Kashmiri chili powder, and the masala paste. Let it rest for 30 minutes.

Heat 3 tbsp oil in a pan. Add 1 tsp mustard seeds and 1 tsp cumin seeds. Once they splutter, add 2 chopped onions and 2 slit green chilies. Sauté until translucent.

Add marinated chicken and stir well. Then add 2 chopped tomatoes, cook for a couple of minutes, and sprinkle in 1 tsp of the reserved masala powder and a few curry leaves.

Pour ½ cup water, adjust salt, cover, and cook for 15 minutes until tender.

Finish with a sprinkle of the remaining masala powder and chopped coriander.
